Chocolate Covered Peanut Butter Banana Oat Balls

A healthy, all natural snack to satisfy your chocolate cravings without eating anything artificial or processed!

Chocolate, peanut butter, and bananas. Do I need to say more? I’m sure you’ve heard of making banana “nice” cream- but these bites take that method to another level. These chocolate peanut butter banana oat balls are a hand held treat that’s perfect for a post gym cool down-or just because. These snacks make use of PB powder rather than whole peanut butter– but you can swap it out for whole pb if you’d like (just make sure its free from additives like palm oil). This is really personal preference, as I’m currently obsessed with PB powder.

What is PB powder?

It’s just peanut powder. Peanut butter without the oil. While peanut butter is around 180 calories for 2 tbsp, PB powder is only 50 calories with the same protein amount. While I don’t subscribe to calorie counting & generally focus on food quality/ingredients- using PB powder made sense here. Peanut butter will make this mixture loose and hard to work with.

What you need to make these peanut butter banana oat balls:

  • 3 mashed bananas, the riper the better
  • 3/4 cup old fashioned rolled oats
  • 4 tbsp PB powder, or 2 tbsp peanut butter
  • 1/4 cup unsweetened coconut flakes
  • 2 tbsp honey (shop local!)
  • 2 tsp ground cinnamon
  • 1 cup dark chocolate chips
  • 1 tbsp coconut oil

Let’s get to work!

Add the first six ingredients into a bowl and combine. Do not over mix. Drop by tablespoonfuls onto a freezer safe mat or baking sheet. I use either my Silpat mat or these from Target. At $8 a mat, they’re hard to beat.

Freeze them for about 15 minutes, or until they are firm. While they’re freezing, melt the chocolate and coconut oil using your preferred method. I use the double boiler method, because I’m not a fan of microwaves. Once frozen/firm dip the balls into the dark chocolate and top with some extra coconut flakes.

Freeze until the chocolate is hard, and transfer to a freezer safe container. I love these as a post gym snack, or dessert after my high protein Turkey Burger Bites. I hope you enjoy!

Ingredients
  

  • 3 bananas mashed
  • 3/4 cup old fashioned oats
  • 4 tbsp peanut butter powder
  • 1/4 cup unsweetened coconut flakes
  • 2 tbsp honey
  • 2 tsp ground cinnamon
  • 1 cup dark chocolate chips
  • 1 tbsp coconut oil

Instructions
 

  • Add the first six ingredients into a bowl and combine.
  • Drop a tablespoon of the mixture onto a freezer safe baking sheet or baking mat. Arrange the balls so they are not touching. The mixture will be slightly loose. Freeze for 15 minutes or until solid.
  • Melt the chocolate and coconut oil using your preferred method. I use the double boiler method.
  • Once the balls are solid, dip them into the chocolate and top with additional coconut flakes. Freeze until the chocolate is solid and transfer to a freezer safe container. Store in the freezer. Enjoy!
