Low Carb High Protein Turkey Burger Bites

A low carb hand-held recipe to enjoy the flavor of a turkey burger without a bun!

If you frequent the gym on weeknights, you know there’s no better feeling than coming home knowing you have a protein packed dinner waiting for you after you just worked your butt off. Or, maybe you don’t work out-but still prefer to stay carb light with your meals. Either way, these turkey burger bites are filling & packed with protein. We’re going to pack all of the topping inside of them- feel free to add or subtract whatever you like!

I’m serious- these bites are only 300 calories, contain 3g carbs, and 42g of protein for three. And there’s a ton of cheese in them! I’m never able to make it through three of these, I’ll maybe get to two and a half. With oats providing even more health benefits, you’ll be adding these to your weekly meal rotation with my mini taco bowls.

Plus, you can still have a few drinks and stay in check with your daily health goals.

What you need to make these turkey burger bites:

  • 1 Tbsp peanut oil (or whatever oil you prefer to cook turkey meat in)
  • 1 pound 99% lean ground turkey (or 93%, this will add minimal calories)
  • 1/2 yellow onion, minced
  • 1/2 cup old fashioned rolled oats
  • 1/2 cup diced dill pickles (this is really a preference ingredient-add or subtract as you like)
  • 1/2 cup grated parm
  • 1/2 cup shredded cheddar cheese
  • 2 eggs
  • 2 tbsp dijon mustard (again, preference)
  • 1 tbsp ketchup

Cook the onion & prep the oven

Pre-heat your oven to 425F and sauté the onion in a pan over medium heat. Once translucent, remove from pan and let cool. Cook the turkey in the same pan. While the turkey is cooking, combine the rest of the ingredients in a bowl (reserve 1/4 cup cheddar). Be sure that the eggs are room temp and the onions are cooled.

Add the turkey and divide into the tins

Allow the turkey to cool, and then add it to the mixture. Divide the mixture between the 12 sections and bake for 25 minutes at 425F. After 25 minutes, remove them from the oven & top with remaining cheese. Place back into oven on broil for 2 minutes, or until cheese is bubbly.

If you’re wondering why three of my bites look pink- it’s because of the ketchup. I can’t live without it, but my boyfriend…he gets extra mustard in his. This recipe is extremely customizable- you can add whatever you like or remove what you don’t. Just keep the oats and egg ratio the same, and they will turn out fine.

Ingredients
  

  • 1 lb lean ground turkey 99% lean
  • 1/2 yellow onion minced
  • 1/2 cup old fashioned rolled oats
  • 1/2 cup diced dill pickles drained
  • 1/2 cup parmesan cheese grated
  • 1/2 cup white cheddar shredded
  • 2 eggs
  • 2 tbsp dijon mustard
  • 1 tbsp ketchup optional

Instructions
 

  • Preheat oven to 425F. Cook onions over medium heat until they are translucent and soft. Remove from pan and allow to cool. Cook turkey in the same pan.
  • While turkey is cooking, combine the rest of the ingredients in a bowl. Make sure the eggs are room temperature and the onions are cool. Reserve 1/4 cup of cheddar for topping.
  • Once turkey is cooled, add it to the mixture.
  • Prepare a 12 count muffin tin by spraying it with cooking spray. Divide the mixture into the 12 sections of the pan.
  • Bake for 25 minutes. Remove from oven and top with remaining cheese. Place bake into the oven under broil for 2 minutes, or until cheese begins to bubble.
