All natural & healthy energy balls with peanut butter, oats, chia seeds, & espresso to boost your mood and energy.
Let me start by saying this-if you don’t like the flavor of coffee this recipe is not for you. Try some of my Chocolate Covered Peanut Butter Banana Bites instead. Okay, now that that’s out of the way… I personally love coffee and anything coffee flavored. These espresso energy balls are full of that pure coffee flavor & will take the edge off of your mid afternoon hunger.
What do I use to flavor these espresso energy balls?
Espresso! That simple. Buy some espresso grounds at the store and you’re good to go. Ever had chocolate covered espresso beans? This recipe is going to give you similar vibes. I don’t have much to say about these other than they’re all natural and full of good for you ingredients like chia seeds & oats. These espresso energy balls are a combo of superfoods to keep your energy up & your day going!
All you need is…
- 1 cup of rolled oats (dry)
- 1 cup of peanut butter (follow that link & make your own!)
- 1/2 cup Espresso grounds
- 1/2 cup unsweetened coconut shavings
- 1/3 cup honey
- 1/4 cup chia seeds
- 1/4 cup chocolate chips
- any additional topping you’d like!
Combine & form
Add all ingredients to a bowl and combine with your hands. I’ve tried using a spoon, it’s just so much easier to use your hands. I split my mixture into two bowls so I could do half white chocolate and dark chocolate. Roll into equal sized balls and freeze for about ten minutes- so they become slightly firm, then store in the fridge.

Espresso Energy Balls
Ingredients
- 1 cup rolled oats
- 1 cup peanut butter
- 1/2 cup Espresso grounds
- 1/2 cup unsweetened coconut
- 1/3 cup honey
- 1/4 cup chia seeds
- 1/4 cup chocolate chips
- any additional add ins you like
Instructions
- Combine all ingredients into a bowl and mix with your hands.
- Form into 22 equal sized balls and place on a baking sheet or plate. Freeze for 10 minutes so that balls can slightly harden, then transfer to the refrigerator.
- Enjoy!
