This Anthony Bourdain recipe hits all the high notes-sweet, salty, and spicy.
Full disclosure, this recipe is 100% copied from Anthony Bourdain. I try not to copy recipes- but…it’s Anthony Bourdain… and to be perfectly honest I could dedicate an entire section of my website to him and what I’ve learned from his cookbooks and shows. He was and will always be a culinary icon, so I consider it less of stealing and more of a love letter to his legacy. Okay enough of that, if you love sweet & salty snack mixes or nut mixtures of any kind these “Grill Bitch’s Bar Nuts” are for you. Cayenne gives them a stiff kick in the ass while brown sugar and salt mellow them out to create perfect balance.
This recipe is straightforward and comes together in less than ten minutes. I usually scale it down, for these pictures I used 1/4 of the recipe.
Here’s what you need to make these bar nuts:
- 4 large egg whites
- 5 pounds of mixed nuts
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 tsp ground cinnamon
- 1.5 Tbsp ground cayenne pepper
- 1/2 Tbsp salt
Creating the bar nut mixture
Pre-heat your oven to 325 degrees F. Then, simply combine the spices and sugars with the nuts in a large bowl and toss. Beat the egg whites in a separate bowl until they are almost stiff. Fold the egg whites into the bar nut/spice mixture and combine until evenly coated.
Now, spread the mixture onto a baking sheet lined with either a silicone baking mat or parchment paper. If you are doing the full recipe you will need at least two pans. Bake for 30 minutes total, stirring at the halfway point. They should be dry after 30 minutes, but may need a little longer if you live in a humid climate.

Ingredients
- 4 Large egg whites
- 5 pounds Mixed nuts
- 1/2 cup Granulated sugar
- 1/4 cup Brown sugar
- 2 tsp Ground cinnamon
- 1 1/2 Tbsp Ground cayenne pepper
- 1 1/2 Tbsp Salt
Instructions
- Pre-heat oven to 325 degrees F.
- Combine nuts and spices in a large mixing bowl and toss.
- Whisk egg whites in a bowl until foamy and nearly stiff.
- Fold the egg whites into the nut mixtures and coat evenly.
- Divide mixtures between baking sheets and bake for 30 minutes. Mix after 15 minutes, and turn the pan so they cook evenly.
- Cool before serving.
